Not me, of course. Not always. Depends what it is. Oh, if it is cheesecake, that I'll definetly eat by myself :) nom nom.
Back to today's subject. I mainly bake cakes for occasions, like birthdays and celebrations etc.
For example, on Matteo's birthday, I've made cupcakes with dairy free frosting.
They turned out ok. I loved the new sky blue colour, I've used it again.
The dairy free spread I've used was Nuttelex original.
I made lots of frosting, I used 500g of spread and 1kg of icing sugar. This needs to be mixed by hand with a spatula. I enjoyed the process actually, did it when kids were asleep, it relaxed me, all that rubbing & turning with the spatula.
I also mixed strawberry jam into a small batch of uncoloured frosting, gave it a nice taste and texture too.
The supermarket I go to does not carry good flavours, I will make time one day to a specialty shop for a bigger range.
Next batch of cupcakes will probably be red velvet, as I'd like to try this new Philadelphia cream cheese with strawberry.
