Most of the recipes I try are Googled. Thank God for Google, or thank Google as Google is great! Pictures help me get an idea of what the final product is supposed to look like. And then again they don't sometimes, like this particular cookies.
This recipe is from Down to earth. It is egg free, for those of you with egg allergy.
It makes a million cookies and it's going to be a pass down recipe, hopefully to my daughter. You can taste the condensed milk, I wonder if you could replace condensed milk with caramel, maybe reduce flour amount. I will try it one day.
This recipe made a soft dough, I had to use a piping bag. I could have refrigerated it I guess but I like using the piping bag. From 2 cm width piped cookies the expanded to twice the width. I reckon it would make nice snowman cookie if piped in that shape. Another mental note to try to make snow men.
Ingredients:
500 g unsalted butter, softened
1 can condensed milk (395g)
1 cup caster sugar
5 cups self raising flour
Pinch of salt
Vanilla essence
Extra: whatever you like to add: choc chips, m&m's, nuts dried fruit.
Beat butter with sugar until pale and fluffy. Add condensed milk & vanill essence. Stir in salt, add flour slowly.
The dough came out a bit soft, so I used a piping bag with a wide round nozzle to pipe out the cookies. As I had piped them out too closely together, they ended up looking like a honeycomb pattern. It did not worried me, edible still.
I have adapted and piped them in a 7 cm lenght, about 2 cm width, and they more than doubled when cooked.
I have also rolled some by hand, and they expanded too.
Conclusion: if you add nuts, choc chips etc, you can roll them into balls, then put them on a tray lined with baking paper leaving lots of room in between.
If you make them plain, you can use a piping bag to pipe them into rounds or long stick shapes. Use plain nozzle as when they expand they lose the star shape. You can stick choc chips etc on top.
Bake them for 10 min in 160C oven, fan forced, or approx 175 C normal oven. They should be light golden colour.
These cookies look similar to the domino ones just because of the choc chips, however the texture is totally different.
